Summer in the Twin Cities means farmers markets, patios, and the particular joy of eating something delicious outside. This year, skip the ordinary and treat yourself to these unique pies from local bakeries.

Pieway to Heaven - MN Vikings Pie Purple and Gold Pie (Eden Prairie)

Just looking at these pies will make you hungry. From the apple pie covered in cinnamon roll pinwheels, to a multilayer pie with mixed berries, lemon curd, and topped with edible flowers (for extra gorgeousness), Pieway to Heaven knows people eat first with their eyes. Check out the MN Vikings pie made with your choice of filling and a striking purple and gold tight lattice top. It’s made from natural fruit and spices and may be the dramatic showpiece you’ve been waiting for.

Rebecca’s Bakery - Ricotta Pie (Minneapolis x2)

In addition to divine Ethiopian coffee and loads of Italian treats, here you’ll find this ricotta pie, perfect with fresh fruit for your summer picnic basket. In addition to their Franklin Ave. location, Rebecca’s Bakery & Cafe recently opened a second location in Dinkytown. Buon appetito!

Potter’s Pasties & Pies - Banoffee Pie (Minneapolis and Saint Paul)

You may have seen these British-inspired food trucks at Art-A-Whirl and other festivals around town. Savory pasties are their specialty, but did you know Potter’s Pasties & Pies also sells banoffee pie for pick up? It’s a traditional British flavor made of banana, toffee (here they call it dulce de leche), and whipped cream layered inside a graham cracker crust.

Vikings and Goddesses - Roasted Pineapple Tamarind Pie (St. Paul)

This tremendous sweet and sour pie is made with two whole pineapples that have been cut, roasted and tossed with rum, cinnamon, and pineapple juice. The pie is topped with brown sugar cinnamon streusel and … wait for it, a tamarind caramel. Try a slice at the Mill City Farmers Market in Minneapolis or buy a whole pie at Vikings and Goddesses’ retail shop in St. Paul.
